As the days grow longer and Carlingford comes to life for the summer season, Four Seasons Hotel Carlingford is refreshing its menu with a focus on local produce and lighter dishes, with a dining experience that works just as well for visitors as it does for loyal local guests.

From fresh seafood and seasonal salads to wedding menus made for sunny celebrations, the months ahead are all about making the most of the season.

As we move into the new season, tell us about the menu at Four Seasons Hotel Carlingford.

This summer, we’re focusing on freshness and locality. We’re making the most of the best seasonal ingredients and creating dishes that feel lighter, brighter and perfect for relaxed dining.

We’ve also made a real effort to ensure the menu feels inclusive. Whether someone is gluten-free, vegetarian or vegan, there are plenty of options available, and many dishes can be adapted to suit different dietary needs.

There’s also a stronger focus on seafood this season, including a daily catch of the day sourced locally, as well as a wider range of seafood across the menu. Overall, it’s designed to appeal to both visitors and local diners alike.

What seasonal ingredients or flavours do you most enjoy bringing to the menu in spring and early summer?

At this time of year, it really is all about seafood for us. As the season shifts, we’re lucky to have access to beautifully fresh local catches, and that naturally becomes a real highlight of the menu.

We love pairing seafood with lighter accompaniments, fresh salads and bright flavours that allow the quality of the ingredients to speak for themselves. It’s a natural fit for the season and something we’re really excited to showcase.

Are there any new dishes or seasonal favourites on the menu that you think guests will especially love?

There’s a strong focus on lighter bites for the season ahead, and we’re introducing a few standout additions too.

We’re adding a house pâté, which is something you don’t see everywhere now, as well as an indulgent deep-fried brie that we think will be a real hit.

Seafood remains a big part of the story too. Our seafood chowder is always popular and is packed with local produce, including mussels and cockles. We’re also serving dishes like prawn tempura, which celebrate the best of what’s available right on our coast.

Altogether, it’s a menu where we think everyone will find something they love.

How do you make sure your dining experience appeals to both local diners and guests staying at the hotel?

Local ingredients are a huge part of that, but price matters too. We’re always looking for the right balance and making sure the menu feels accessible.

Visitors to a coastal village naturally gravitate towards seafood, while our local guests may be more likely to look for hearty meat dishes and familiar favourites. We want to make sure we’re offering both, so the menu feels welcoming and appealing to everyone.

With wedding season getting underway, what kind of food options are couples looking for at Four Seasons Hotel Carlingford this time of year?

During the winter months, couples often lean towards richer, more indulgent dishes that suit the colder weather. In the summer, we see a real shift towards fresher, lighter choices.

That might mean lighter starters and mains, more salads, swapping salmon for seabass, or choosing desserts like pavlova with fresh seasonal fruit. Some couples even replace a soup course with a refreshing sorbet.

The drinks reception changes too. With longer days and warmer weather, guests can make the most of our gardens, so couples often choose options like a gin bar, cocktails or spritz stations. We also see fun seasonal touches like ice cream bars becoming popular in the warmer months.

For us, it’s about both change and consistency.

We’re introducing a new menu, and the early weeks are about refining it, listening to feedback and understanding what resonates most with our guests. If something doesn’t quite work, we’ll adjust and improve it. That process of listening and evolving is really important to us.
